Cherry filled crepes

I can say that I am one of those people that just don’t like cherries. But through this recipe I can say that they added a great feeling to my taste buds and might just keep me happy all day long! They are a must try!

Ingredients :

1 1/2 cups all purpose flour

1 tablespoon sugar

1/2 teaspoon salt

2 cups milk

2 tablespoon butter or margarine melted

1/2 teaspoon vanilla

2 large eggs

Cherry pie filling

powdered sugar if desired

1-In medium bowl, mix flour, sugar baking powder and salt. Stir in milk, 2 tablespoons butter the vanilla and eggs. Beat with hand beater until smooth

2-Lightly butter 6 yo 8 inch skillet or crepe pan. Heat over medium heat until bubbly

3-For each crepe pour slightly less than 1/4 cup batter into skillet. Immediately rotate skillet until thin layer of batter coves bottom. Cook until light brown. Run wide spatula around edge to loosen turn and cook other side until light brown.

4-Stack crepes. Placing waxed paper between each. Spread the cherry pie filling over each and roll up. Sprinkle with powder sugar.
